You can rename the backup folder so that the device thinks there is no backup and starts creating a new one. You can also go to info.plist file and change the display name. You can add the date to the name to tell the difference. Go to iTunes and right click on iPhone. Choose restore from backup. You will now be given a list of backups. You can choose the one that suits you. This finishes the task.
